Vanilla Cupcakes


I have been making several type of vanilla cakes and cupcakes for a while now and these vanilla cupcakes are the prefect soft and fluffy ones. I came across this recipe from one of the cookery group, the admin of this group is a marvelous cook, and i adapted her recipe with minor changes. 
I always loves plain cakes in all the forms, whether it is a cake, a cupcake, muffins etc., with a hot cup of tea. And my toddler is in love with this cupcake, whenever she asks me "Mamma cake", i am baking this one for her.

Vanilla Cupcakes
Preparation Time: 10 minutes
Baking Time: 20 minutes

Ingredients:-
All Purpose Flour - 3/4 cup
Sugar - 3/4 cup
Egg - 2
Milk - 1/4 cup
Butter - 50 gm
Baking soda - 1/4 tsp
Baking Powder - 1 tsp
Salt - a pinch

Method:-
In a bowl combine the dry ingredients;Flour, baking soda, baking powder and salt.
In another bowl beat together Butter and Sugar till creamy texture about 4 minutes using an electric mixer or a hand whisk.
Beat in the eggs one at a time.
Add Vanilla essence.
Reduce the mixer speed to low and beat in half f the flour mix, then all the milk and then remaining half of the flour mix until just combined.
Line 8 or 9 muffin cups with paper liners.
Divide the batter among the lined cups, filling each three-quarters full.
Bake for 20 to 25 minutes at 180 degree Celcius, until a toothpick inserted into the center comes out clean.


Notes:-
1. For an extra fluffy cupcakes, separate the egg yolk and white. Combine the yolks to the batter as usual and separately beat egg whites till soft peaks. Fold these egg whites in the finished batter. Bake the batter and you will get an extra fluffy cake.
