No Bake Blueberry Cheese Cake
This is an easy peasy desert i had made long time before. I had hesitated many time to make this one as i wondered whether i will be the only one to eat it as my husband is not a great liker of sweets and am a one with a big sweet tooth :D. And the comment from him was it is nice but its very sweet. And i was like come on, it is desert not pickle !! lol !! But i was happy that he ate it completely whatever i served for him. It is like if he didn't like much he will have some for my sake and will keep the remaining portion for me. And the next day here comes my cousins (all of them with big big sweet tooth 😁) and they had cleaned my cake box without keeping a tiny bit of it.
No Bake Blue Berry Cheese Cake
Preparation Time: 15 minutes
Ingredients:-
Biscuit - 1 1/2 cups (I used digestive)
Butter - 1/2 cup (melted)
Whipping cream - 2 cups
cream cheese - 400 g (I used Philadelphia)
Vanilla essence - 1 tsp
Sugar - 1/2 cup
Topping
Blueberries - 1 cup
Sugar - 1/4 cup
1.In a pan, add blueberries and sugar and stir in a medium flame until blueberries are mashed up little and combined with sugar syrup. Keep this aside.
2. Mix well powdered biscuit & melted butter.
3. Press it evenly in a cake pan. And refrigerate for half an hour.
4. In a bowl whisk whipping cream till soft peaks are formed.
5. Add cream cheese and beat well until smooth. Add sugar and vanilla essence and beat well.
6. Pour this mix over the biscuit base and smooth the top evenly.
7. Add prepared blueberry topping over it and refrigerate for 4-5 hours or overnight.
