Omunoodles

Omurice / omelette rice is a Japanese cuisine, "Omu" is an abbrevation for "omurestu" (omelette pronounced with a Japanese accent) and "rice" (pronounced "raisu") refers to the sweet savory chicken rice its filled with. The rice is mixed up with chicken, veggies and sauces, which makes it the perfect sweet and tangy contrast to the creamy egg surrounded.
I made this dish when my younger brother was with me during his winter vacation. He preferred noodles over rice, so i substituted, and it came out well.

Omunoodles
Preparation Time: 30 minutes

Ingredients:-
Boiled noodles - 1 cup
Onion - 1
Chicken -200g (or 1 breast piece)
Carrots -1/2 cup
Capsicum - 1/4 cup
Spring Onion - 2 strands
Tomato sauce - 2 tbsp
Soya sauce - 1 tbsp
Eggs - 2
Milk - 2 tbsp
Vegetable oil.
Salt
Pepper

Method:-
1. In a pan, add oil and saute onion.
2. Add chicken and cook until its almost done.
3. Add veggies, salt and pepper. Saute well till veggies are soft.
4. Add noodles, tomato sauce and soya sauce and toss them well.
5. Keep the noodles mix aside.
6. In a bowl whisk together egg and milk. season with a pinch of salt.
7. In a flat pan, heat 1 tbsp oil and pour egg mix, swirl and spread the egg mix over the pan.
8. Lower the heat and cook till bottom of omelette is done and top still soft.
9. Put a portion of prepared noodles over the center of the omelette
10.Using a spatula, fold both side of omelette towards the center to cover the noodles.
11.Slowly move to the edge of the pan and transfer to the serving plate.
12.While it is still hot, shape into American football shape.
13.Repeat the process with remaining noodles.
14.Server with ketchup drizzling over the omunoodles.

Omurice / Omunoodles are commonly served with tomato ketchup.
Or else it cab be served with a brown sauce and here goes the recipe.

Brown Sauce
Preparation Time: 10 minutes

Ingredients:-
Chicken stock : 1 cup
Onion - 2 tbsp
Carrots - 2 tbsp
Celery - 2 tbsp
Butter - 2tbsp
All purpose flour - 2 tbsp.

Method:-
1. In a pan, melt butter, saute onion.
2. Add carrots and celery, saute till carrots are cooked. 
3. Add AP flour, mix well till raw smell disappears.
4. Pour the stock and continuously stir.
5. Cook till medium thickness attained.
6. Season with pepper and salt.


Notes:-
1. In the ingredients substitute rice with noodles for making omurice.
2. Veggies can be used as your choice, like broccoli, cauliflower, baby corn etc.
