Chicken Tikka


Chicken Tikka is a Indian delicacy, which has gained much popularity over times. Easy to cook and always a crowd pleaser. The tikkas are traditionally made in hot clay based oven called Tandoor and in our kitchen we can either grill it in oven or on stove top. Tikka refers to cubes or pieces and Chicken tikka is the cubes of chicken marinated in spiced yogurt mixture and left for sometimes before grilling them, to tenderize naturally and absorbs the flavor.

I made this first time for a get-together lunch and all my family enjoyed having them. So i can strongly recommend you to try this out.

Chicken Tikka
Preparation Time : 1- 2 hours (including refrigerating marinated chicken)
Cooking Time : 10 - 15 minutes

Ingredients:-
Chicken Breast - 500 to 600 grams (diced - cut into squares)
Ginger Garlic Paste - 1 tbsp
Turmeric Powder - 1/4 tsp
Chilli Powder - 1 tbsp
Kashmiri Chilli Powder - 1 1/2 tbsp
Fennel seed powder - 3/4 tsp
Garam Masala - 1/4 tsp
Corn flour - 1 tbsp
Yogurt - 1 1/2 tbsp
Vinegar / lemon juice - 1 tbsp
Salt to taste
Capsicum - 1 diced
Onion - 1/2 diced
Oil (for shallow fry

Method:-
1. In a blender, blend all the ingredients together except chicken, capsicum, onion and oil.
2. Marinate this blended mix on the chicken pieces. Move the marinated chicken in an air tight container and refrigeration for at least 1- 2 hours or freeze it for 15 minutes.
3. In the same bowl where chicken was marinated, throw the diced capsicum and onion and combine well in the left over mix.
4. Take out the chicken and in a skewer, skew chicken , capsicum and onion alternately.
5. Heat a frying pan, pour little oil for shallow fry.
6. Grill the skewed chicken and veggies. keep on turning over the skew.
7. Don't overcook, The chicken should be juicy, not dry.

Notes:-
1. Prior to marinating the chicken, the chicken should be completely out of moisture.
2. For best result, refrigerate the marinated chicken overnight.
2. The skewer should be soaked in water for sometimes before using to prevent it from burning.
3. The recipe can be grilled in oven at 200 degree Celsius for 20 minutes.
4. If no skewers, just lay flat on the pan or baking tray and grill them.
