Basbousa


Basbousa is a traditional Egyptian sweet cake. Whenever our manager (in office) comes back from his home country(Egypt), he carries this one for us and we indulge into it. Since then i wanted to make it my own and while discussing about the recipes with my friends i found its so easy. Just mix all the ingredients and bake it. Done! And those without sweet tooth can enjoy like this without adding sugar syrup.
The next day i made it, i had carried it to my office, also send with my husband to his colleagues and also some part to my in-laws and from every where i got good reviews. So i can assure this one is a foolproof recipe and a delicious one.

Basbousa
Preparation Time : 5 minutes
Baking Time : 40 minutes

Ingredients:-
Semolina - 2 cups
Coconut - 1 cup (grated)
Egg - 1
Butter - 1/ cup (melted)
Yogurt - 1/2 cup
Milk - 1/2 cup
Sugar - 1 cup
Baking Powder- 1 tsp
Vanilla essence - 1tsp

For syrup
Sugar - 1 cup
Water - 1 cup
Lemon juice - 1 tsp
Rose water - 1/2 tsp
Cardamom Powder - 1/4 tsp

Method:-
1. In a large bowl mix together semolina, coconut, egg, butter, yogurt, milk, sugar, baking powder and vanilla essence. Combine well.
2. Spread this semolina mix to a greased baking tray.
3. With a knife, mark/cut them as equal squares or diamond shapes. 
4. Place almonds in center of each square/diamond shape.
5. Bake at 190 degree Celsius for about 35 to 40 minutes till golden brown.
6. Meanwhile prepare the syrup
    a. In a pan stir together sugar and water until sugar dissolved. Simmer the flame for 5 minutes and add lemon juice and rose water and mix well.
7. Drizzle the sugar syrup over the baked hot basbousa cake.
