Stuffed Capsicum / Stuffed Bell Pepper


The Stuffed Bell Peppers are colorful, delicious & a healthy dinner idea. If you love the smell and flavor of bell peppers, then this one for you and will be a sure-fire hit!
Stuffed bell Peppers are part of traditional Spanish Cuisine. The stuffing may vary from non-veg to veg or any cereals etc. Here i have a minced beef filling together with some veggies and topped with bachamel sauce and cheese and then baked to perfection. It was a classy dinner for us and i had a thumbs up from my Mr., Blush! 😊. 



The recipe is easy and versatile, you can use any veggies or any spices. But this recipe i have tried is light and truly a delicious one. The recipe calls for parsley, but i used a handful of coriander leaves, i just love the smell of fresh coriander leaves.

Stuffed Capsicum / Stuffed Bell Pepper
Preparation Time : 
Baking Time : 25 minutes
For Filling
Capsicum / Bell Pepper -3
Minced Beef - 250 g
Onion - 1
Garlic - 3
Carrot -1
Capsicum - 1 (small), optional
Tomato paste - 2 table spoon
Pepper - 1 tsp
Salt
Parsley - 1 hand ful
Oil - 3 tbsp
For Bachamel Sauce
Butter - 2 tsp
Flour - 1 tsp
Milk - 1 cup
Pepper
Salt
Other ingredients:-
Mozzarella Cheese - 1/2 cup
Coriander Leaves
Olives (Optional)

Method:-
Preparing the Filling
1. Heat a frying pan. Add  Oil. Once hot, add onion and garlic. 
2. Once onion is translucent, add minced beef. Add salt. Combine well and close and cook, stirring in between under beef is browned and cooked. 
3. Add finely chopped carrots and capsicum, once almost done, add tomato paste, pepper and adjust salt. Let if combine and cook well for another 5 to 7 minutes. 
4. Add parsley, mix well. Turn off the flame and keep aside.
To prepare Bachamel Sauce:-
1. Heat a non-stick pan, add butter.
2. Once butter melts, add flour. Stir well till till flour is combined well and the raw smell disappears. Make sure the flame is low so that the flour is not burnt. about half a minute.
4. Stir in milk, a little at a time, making sure to stir well so that no lumps are formed. Bring the mixture to the boil, stirring constantly, so that the mixture thickens and becomes glossy. Add salt and pepper.
Stuffing Bell Pepper:-
1.Cut capsicums in half. Discard seeds and membranes. Spoon mince beef mixture into halves.
2. Over it spread 1 tablespoon of bachamel sauce and sprinkle some cheese
3. Transfer the stuffed bell peppers to an ovenproof dish greased well with oil .
4. Bake, uncovered, in a moderate oven at 180°C for about 25 minutes, or until cheese is golden.

Notes:-
1. As i need my Capsicum to be well cooked, i had baked it prior to stuffing for 10 minutes at 180°C. or even you can just cover and stir fry in a pan for a little time. (This is completely optional)
