Bread Banana Pola / Bread Banana Cake / Bread Banana Kums



Pola's / Kums are the cake type snack found in the Malabar regions of Kerala. Apart from baking in oven, most of the pola's are cooked on stove top on low heat till done. There are a wide varieties of them and some of them are kaipola, tharipola, carrot pola, apple pola, bread pola, macroni pola, noodles pola and the list goes on. The basics of each pola is mixing the main ingredient with egg mix and then cook in low flame to attain a cake shape. 
Here in bread banana pola,you can use either white bread or brown bread, and the banana used is plantains. Plantains are rich source of fiber, vitamins, minerals, magnesium and potassium. So we can say this one is an easy, yummy and healthy snack. Apart from bread and plantains, the main ingredient used is egg which is common for all kind of pola's. The layers of bread and banana-coconut mix makes this one a colorful and delectable snack to gobble with a cup of hot tea.

Preparation Time : 5 minutes
Cooking Time : 15 minutes

Roast the cashews and raisins in ghee
Roast finely chopped plantains in ghee
Roast together, Coconut, sugar and cardamom
Mix roasted plantain to the coconut and combine well
Plantain-Coconut Mix Ready
Dip bread pieces in egg-milk mix and arrange as bottom layer
Middle layer arrange plantain-coconut mix
Top layer again with remaining bread &egg milk mix
Inverting the pan to another pan to cook the top layer
Inverted pola to cook the top layer

Ingredients:-
Bread - 6 pieces
Plantains - 1 big / 2 medium ()
Coconut - 1/4 cup
Egg - 4
Milk - 1/4 cup
Cardamom
Sugar - 10 tbsp
Ghee - 3 tbsp
Cashews - 2 tbsp
Raisins - 1 tbsp
White sesame seeds (optional) - 1 tbsp

Method:-
1. In pan, add 1 tbsp ghee and roast cashews and raisins. Keep them aside.
2. In the same pan, add finely diced plantains, and roast then till golden. Keep aside.
3. Again the same pan, add 1 tbsp ghee and add coconut, 2 tablespoon sugar and 2 pods of crushed cardamom. roast for 2 minutes and then add the roasted plantain pieces and half of the cashews and raisins into it and mix well. Keep aside.
4. In a bowl, mix together egg, milk, 8 tbsp sugar, 4 crushed cardamom pods. Whisk well. Adjust sweetness accordingly.
5. In a non stick pan, add 1 tbsp ghee and swirl the pan so that the ghee is spread all over the pan.
6. Dip bread slices in the egg mix and arrange as in the bottom of the pan as the base. For the bottom layer you can use 3 breads.Adjust the bread pieces, so that no gaps are found and add little more egg mix in gaps. But make sure to keep half of the egg mix for the top layer.
7. Spread the banana-coconut mix evenly over the arranged bread.
8. Now as a top layer again dip the remaining breads in the egg mix and keep them oven the banana-coconut mix.
9. Once all the breads are arranged, pour the remaining egg mixture all over the bread to fill the gaps and sides. Top with remaining roasted cashews, raisins and sesame seeds.
10. Cover the pan and cook in very low flame for about 5 to 10 minutes, till it's set well.
11. Gently try to pull out the sides of the pola from the pan using a spatula.
12. Arrange another nonstick pan with little ghee spreaded over it. Flip the pan with pola over the newly arranged pan so that the top of the pola is now in contact with the pan.(Please refer picture)
13. Cover and let it cook for another 5 minutes in very low flame. 
14. Invert to serving plate and serve warm.

Notes:-
2 more ways to prepare this pola.
1. The other way to prepare this pola is grind the bread to powder and then mix them in egg mixture and pout half of the egg mix, then banana-coconut mix and the top layer with remaining half of the bread egg mix.
2. Also the third method is, without layering just combine all together, like combine finely powdered bread in egg mix, and also add the banana-coconut mix to it. Give it a nice stir and pour to the greased non-stick pan. Cook on both sides.
