Khameer/Bakhmri Bread



Khameer/Bakhmri, an emarati bread originated in Yemen, is a soft and fluffy one made either sweet or savory depending on your taste. I made it savory which was mind blowing together with Chicken Gravy.
The recipe was in my bucket list since long and when i tried i felt it as a simple, super easy and really a keeper one. Khameer can be made both in round shape and triangle shape, but triangle one is easy for me. It resembles Indian Battura, and as per my mom, it tastes better than battura 😌. The dish is mainly served sweet as a tea snack. So if you need it to be sweet, you can increase the amount of sugar in the recipe. Also black seeds and cardamom are used which is optional. But i recommend to add cardomom powder if you are going for sweet version.



Khameer/Bakhmri Bread
Preparation time : 2:30 hours (including dough resting time to rise)

Ingredients:-
All Purpose Flour - 2 cups
Instant yeast - 2 tsp
Sugar - 2 tsp
Milk Powder - 2 tbsp
Milk - 3/4 cup (warm)
Olive Oil - 3 tbsp
Salt

Method:-
1.  In a bowl, mix together Flour, yeast, sugar, milk powder, 2 tbsp oil and salt.
2.  Knead to soft dough using warm milk.
3.  Rub oil in your hand and knead the dough for another 5 minutes more.
4.  Rub oil over the surface of dough
5.  Keep the dough to rise for 2 hours, until it doubles the size. You can keep a damp cloth over the bowl, to keep the moisture.
6.  Knead the dough again and divide to 4 equal portion.
7.  Flatten the dough, spreading little flour, to a big round circle with little thickness.
8.  Cut the circle to 8 equal portions.(as shown in above picture even though not equal portion 😌) Let them rest & rise for another 10 minutes.
9.  Heat the oil in a frying pan on medium heat and fry the bread. It should rise to the top and puff up. 10.Flip to other side and cook till golden. Serve Hot.
