Milk Pudding


An easy and delicious jiggly wiggly melt in mouth pudding that can be made in a breeze. This makes a perfect quick dessert for any occasions or if you just crave for puddings. The ingredients for this recipe is very minimal and is versatile. And these simple puddings are for sure to please everyone's palate.


I can say this is the first ever dish i had made myself  when i was around 12 or 13 (as per mom's calculation). I got the recipe from my aunt Sharbeena who is a great cook. I learned the ideas of puddings  from her. Whenever she visits our home, we definitely insist her to prepare one pudding. Ans she is such a sweetheart who never says No 😍😘I remember my brothers were so eager to bring milk and other stuffs from grocery dreaming on the yummilicious pudding to be digged into.

Coming to the pudding, Agar agar / China Grass used in this pudding is a vegetarian substitute for gelatin and is a good source of calcium and iron, also very high in fiber. It contains no sugar, no fat and no carbohydrates.The right amount of China grass makes the pudding jiggly wiggly, if the amount is more, the pudding can turn out firm and if less, pudding will not set and will be watery. 




Milk Pudding
Preparation Time : 15 minutes

Ingredients:-
Milk- 500 ml
China Grass - 10 g
Water - 3/4 cup
Condensed Milk - 1 can
Sugar - according to taste if needed
Vanilla Essence - 1 tsp

Method:-
1. In a pan,  melt china grass in 3/4 cup of water in medium to low flame.
2. In another pan, bring milk to boil.
3. Add melted china grass to milk in between.
4. Once the milk is about to boil, add condensed milk, stir well.
5. Add Vanilla essence. Combine
6. Check for sweetness, and in case you need more sweet, add sugar.
7. Once the milk starts to boil, turn off the flame.
7. Pour the milk mix to a greased pudding bowl and let it cool down.
8. Refrigerate 3 to 4 hours.
9. Top the pudding with roasted nuts, or any sauces like chocolate sauce, toffee sauce, any berry sauce etc.


Flavoring the Pudding
The above is the basic milk pudding recipe. Different flavors of pudding can be made out of it.
1. For chocolate pudding, add, 2 tsp of cocoa powder to the prepared milk mix, combine well, let it cool down and refrigerate. Or even add 2 table spcoon of nutella or melted chocolate.
2. For Rose Pudding, add 3 to 4 drops of rose milk essence or 1 tbsp of roohafza to the prepared milk mix, combine well, let it cool and refrigerate.
3. For any fruit pudding, just make pulp out of any fruits like 1 avocado or 1 apple or 1 mango etc, by grinding them and add them to the milk mixture when it is slightly cooled. Combine well, let it cool  down completely and refrigerate. Follow the same for any dry fruits like almonds, cashews, dates etc. But dry fruits should be soaked in water prior to grinding.
