Chicken Gravy - Dhaaba Style



A rich Chicken gravy with the wholesome flavors of whole spices which goes well with Plain rice or ghee rice.

Chicken Gravy - Dhaaba Style
Preparation Time : 45 minutes (including marination time)
Cooking Time : 25 minutes

Ingredients:
For Marination
Chicken - 1 Kg
Ginger Garlic paste - 1 tbsp
Green Chili - 1
Turmeric Powder - 1/2 tsp
Chili Powder - 1 tbsp
Coriander Powder - 2 tbsp
Garam Masala - 1 tsp
Yogurt - 1 cup
For Gravy
Cardamoms - 6
Cloves - 6
Cumin - 1/2 tsp
Cinnamon Sticks - 2 small
Bay leaf - 1
Dried Red Chili - 1
Onion - 3
Ginger Garlic paste - 1 tbsp
Green Chilli - 2
Tomatoes - 2 (peeled and chopped)
Coriander Leaves
Kasuri Methi (dried fenugreek leaves)- a pinch
Salt
Oil - 4-5 tbsp


Marinate Chicken with ingredients under marinate
Whole spices (forgot to include cumin in the picture)
Splutter whole spices in oil
Saute till onions are golden
Add in ginger garlic paste and tomatoes
Add the marinated chicken
After cooking the chicken in high flame and then in low flame
Water added in the bowl in which chicken is marinated & mixed with the left over marination. 

Method:
1. Wash and drain the chicken and make small slits over the pieces.
2. Marinate the chicken with all the ingredients under marinate, mix well and keep aside for half to one hour.
3. In a pan, add oil, add whole spices, Cardamom, cloves, Cumin, Cinnamon, Bay leaf and red chilli. Let it splutter.
4. Add chopped onion, saute till golden brown.
4. Add ginger garlic paste and green chilies. Saute till the raw smell disappears.
5. Add tomatoes. Cover and cook till tomatoes are cooked well.
6. Once tomatoes are done, add the marinated chicken into it. Mix well.
7. Cook the chicken in high flame for 5 to 7 minutes.
8. Then lower the flame and cover the pan and let the chicken cooks for 10 to 15 minutes.
9. Add in coriander leaves and kasuri methi now.
10. At this point you can add water. Add the water in the bowl in which chicken was marinated, mix well and then add to the chicken. i have added upto 2 cups of water. You can reduce or increase the water as you need gravy consistency
11. Let the chicken cooks for another 5 to 7 minutes in the closed pan. Done!

Notes:
1. You can add more water if you need more runny gravy.
