Chicken and Broccoli



Chicken sauteed with fresh broccoli florets and coated in a sweet & savory sauce. It has full of fresh and delicious flavor and is an excellent lunch or dinner option.
Chicken and Broccoli combination is a healthy and weight loss meal, as chicken is a lean meat and higher in protein, while broccoli is nutritious and a slow digesting carb. So u can consider this dish in your diet plan as well.

Every time when we have broccoli in the pantry, my Mr. needs me to  experiment with it and i have tried a different varieties and combination of broccoli but has not taken a good picture of them to upload it here. But gonna make the successful one's again and will post them😊

Chicken And Broccoli
Preparation Time: 15 minutes
Cooking Time: 10 minutes

Ingredients:-
Chicken Breast - 1
Broccoli - 1 Small cut into smaill florets
Onion - 1 (cut in to squared)
Ginger - 1/2 tsp
Garlic - 2 cloves
Carrot - 1 medium
Soya sauce - 2 tbsp
Worcestershire Sauce - 1 tbsp
Balsamic Vinegar - 1 tbsp
Brown sugar - 2 tsp
Chicken Stock - 1/2 cup
Cornflour - 1/2 tsp (diluted in 2 tbsp of water)
Salt
Pepper
Shallow fry the chicken
Sauteing Onion, ginger garlic and carrots

Preparation:-
1.  Marinate the chicken with some salt and pepper and shallow fry them in 1 tbsp oil and keep aside.
2.  Keep the broccoli florets in mildly salted boiled water for 5 minutes. Drain them and keep aside.
3.  In a bowl, mix together soya sauce, Worcestershire Sauce, Balsamic Vinegar and brown sugar. Keep aside.
4.  In the same wok, add some more oil if need. add onion, ginger and garlic.
5.  Saute till onion is translucent and raw smell of ginger and garlic disappears.
6.  Add in carrots and let the carrots half cook.
7.  Add in broccoli stalks.
8.  Once the broccoli is almost cooked, add in chicken and give it a mix.
9. Pour in the stock, stir well.
10. Pour the sauce mix and allow to simmer on a high heat.
11. Add in diluted cornflour mix stirring continuously until the sauce reduces and thickens slightly.

Notes:-
I usually make the chicken stock, by just boiling the marinated chicken pieces in little water about 5 minutes. The chicken also releases some water by itself by this time. This is my stock. Then i take the chicken pieces alone out of this stock and shallow fry them for further use.
You can use the chicken stock cubes/bouillon cubes. Dilute a very small piece in 1/2 cup of water.
