Chicken and Cauliflower in Apple Sauce
Chicken and Cauliflower together has many divine recipes. They goes well together. And this one in apple sauce is finger licking delicious which is a keeper recipe.
I had some grany smith apples since some days in my refrigerator and i need to try out something different with it other than salads and juices. Tried deep frying them like potato fries, with cornflour dusting over, but came out a very sour apple fries. So i don want to upload the same here. I think the pregnant ladies who is craving for sour foods may like it 😃
Chicken and Cauliflower in Apple Sauce
Preparation Time: 15 minutes
Cooking Time: 15 minutes & another 15 minutes for Apple sauce
Ingredients
Chicken - 1 breast
Cauliflower - 1 small
Onion - 1
Garlic powder - 1 tsp
Flour - 1 tsp
Apple sauce - (Follow the recipe mentioned below)
Chicken stock - 1/2 cup
Red Chilli powder - 1/2 tsp (optional)
Red Chilli flakes - 1/2 tsp (optional)
Salt
Pepper.
Oil
Parsley
For Apple Sauce
Apple - 1 (I used Grany Smith)(Chopped finely)
Apple Cider - 1 tbsp
Garlic - 2 cloves
Salt
Pepper
Water - 1/2 cup

Preparing Apple sauce
1. Simmer all ingredients in a saucepan, covered, stirring occasionally, until apples are tender, about 15 minutes.
2. Once done, mash the apple into applesauce.
Preparing Chicken and Cauliflower in Apple Sauce
1. Marinate Chicken with pepper, salt and a pinch of red chilli powder.
2. Keep cauliflower in mildly salted boiled water for 5 minutes, drain them and keep aside.
3. Shallow fry chicken in 1 tbsp oil. Keep aside.
4. In the same pan, shallow fry cauliflower . Sprinkle some salt over it while frying. Keep aside once done.
5. In the same pan, add little more oil if needed. saute onion, once onion is translucent, add garlic powder, red chilli powder (if using) and flour.
6. Once the raw smell of flour disappears, add prepared apple sauce, give it a stir and add the stock.
7. When the gravy comes thicker, add pepper and red chilli flakes (if using) and adjust salt.
8. Add in the fried chicken and cauliflower and give it a good mix.
9. Garnish with parsley.
Notes:-
1. I usually make the chicken stock, by just boiling the marinated chicken pieces in little water about 5 minutes. The chicken also releases some water by itself by this time. This is my stock. Then i take the chicken pieces alone out of this stock and shallow fry them for further use.
You can use the chicken stock cubes/bouillon cubes. Dilute a very small piece in 1/2 cup of water.
2. Red chilli powder and red chilli flakes are quite optional. i added for an extra spiciness.
