Jujube Pickle



This sweet and sour pickle gives a delicious tune to your taste buds together with any kind of rice. If you are a dates pickle devour, go for it you will love it.

JuJube is generally called as Elandhapazham in southern parts of Kerala. It is a seasonal fruit, also called as Chinese dates. It tastes like a sweet apple when fresh and as dates when dried. In UAE it is available in plenty  in the local farms during winter times and i got 2 bags full from our nearby farm. I was like Oh no, what will i do with all these. Shared with some of the friends and family and remaining i made pickles, in 2 ways. One way it is just immersed in the mix of vinegar and water seasoned with salt and some green chilies, colloquially called as "uppiliduka" and the other one i made like explained below, red hot sweet and sour pickle. Yum!

Jujube Pickle
Preparation Time: 10 minutes
Coking Time : 15 minutes

Ingredients
For Marinate:
Jujube - 1/2 kg (cut lengthwise)
Red chilli Powder - 3/4 tbsp
Turmeric Powder - 1/4 tsp
Salt
For Pickle:
Gingelly Oil - 4 tbsp
Mustard seeds - 1 tsp
Fenugreek - 1/2 tsp
curry leaves - a handful
ginger - 1 tbsp
Garlic - 10 pods
Green chilies - 2
Chili Powder - 1/2 tsp or more (according to your spice level)
Sugar - 1 tbsp
Salt
Vinegar -1/2 cup

Method:
1. Marinate Jujube with the ingredients under marinade for 15 to half an hour.
2. In a pan/kadai, add oil, let mustard seeds and fenugreek splutter.
3. Add curry leaves.
4. Add Ginger, garlic and curry leaves. Give a mix.
5. Add the marinated jujube. Combine well.
6. Let it cook for 5 minutes. Add red chilli powder if require more spice.
7. Add Sugar and adjust salt. Off the flame.
8. Add vinegar and mix well.
9. Let the pickle rest for 1 day and then transfer them to an air tight container
