Chicken Gravy with Coconut Milk


This recipe with Chicken infused & flavored with the spices and rich coconut milk is truly delicious and a keeper one. The rich and vibrant coconut milk enlightens the gravy and also filled the kitchen with enticing aromas.

The gravy is definitely a finger licking one and we enjoyed having it for lunch with plain rice in one of our moody weekend and also with chapathi for dinner. Both ways the gravy suited well. I was happy that my Mr. liked it apart from his favorite red chicken gravy. 

Chicken Gravy with Coconut Milk
Preparation Time : 15 minutes
Cooking Time : 35 minutes

Ingredients:
Chicken - 750 g
Onion - 2 medium
Ginger paste - 1 tbsp
Garlic paste - 1 tbsp
Green Chillies - 2
Curry
Tomatoes - 2 medim
Turmeric Powder - 1/2 tsp
Red Chilli Powder - 1 tbsp
Corriander Powder - 2 tbsp
Fennel Seed Powder - 1/4 tsp
Garam Masala - 1/4 tsp
Coconut Milk - 2 1/2 cups
Coconut Oil
Salt
For Tampering
Coconut Oil -
Onion - 2 tbsp / or 6 to 7 small onions
Shredded Coconut - 2 tbsp
Curry leaves - a handful
Kashmiri Red Chilli Whole - 2

Method:-
1. Wash and drain the chicken pieces
2. In a deep pan, add 2 tbsp oil. Add curry leaves, ginger garlic paste and green chilies. Saute till the raw smell disappears.
3. Add in Onions and saute. While onions are translucent add salt and saute again till golden.
4. Add tomatoes and cook till tomatoes are mashed up well.
5. Add in spice powders, turmeric powder, chili powder, coriander powder, fennel seed powder and garam masala. Saute well for a while.
6. Add in Chicken pieces. Combine well till all the masala's are well coated with chicken.
7. Add 2 cups of coconut milk. Combine well. Adjust salt. Close the lid and let the chicken get cooked in medium flame, make sure to stir in between.
8. Add Potatoes in between and give a stir. Close the lid and cook.
9. Once Chicken and Potatoes are cooked, add half more cup of coconut milk and mix well.
10. Add pepper powder. Off the flame when it starts to boil and keep the lid closed.
Tampering:-
1. In a pan, add coconut oil, add sliced onions saute well.
2. Add shredded coconut, curry leaves and kashmiri red chillies.
3. Saute till golden.
4. Add this tampering to the Chicken gravy. Done!
