Banana Pancake

These fluffy pancake with banana flavor is gonna steal your heart. Any mornings with pancakes makes a great breakfast. They are simple and easy to make and tastes great.
During weekdays Breakfast is always in a hurry burry. So during weekends i make something special but easy, to sit down and enjoy with a nice cup of tea, even though lazy to wake up early.
The key ingredient for a fluffy pancakes is baking powder. The amount of baking powder determines the fluffiness and rise of the pancake. So if you reduce the quantity of the baking powder, you will get a flat pancake, still a tasty one. Also the batter should not be too thin. If the batter is too thin, the bubbles simply escape, rather than rising the pancakes. Check out my YouTube video to be more precise.
You can serve the pancakes with your own choice of berries, honey, maple syrup, cream or sliced/toasted bananas
Preparation Time: 10 minutes
Cooking Time : 15 minutes
Ingredients:
Bananas - 2
Egg - 1
Butter - 2 tbsp + more while making pancakes
All Purpose Flour - 1 1/2 Cup
Sugar - 1/4 cup
Baking Powder - 2 tsp
Salt - 1/2 tsp
Milk - 3/4 cup
Vanilla essence - 1/2 tsp
Method:
1. Mash Bananas and keep aside.
2. Whisk well egg. Add the mashed banana to the whisked egg and combine well.
3. Add 2 tbsp melted butter and mix.
4. In a large bowl, combine together flour, sugar, baking powder and salt.
5. Add the banana egg mix to the flour mix and combine well.
6. Add in milk little by little and mix well until you get a smooth thick batter.
7. Add in vanilla essence and mix.
8. In a griddle / frying pan, brush some butter and pour a ladle full of batter. Cook on both sides. Done.
9. Serve with sliced bananas, maple syrup or pancake syrup.
