Cheese Paratha
Cheese Paratha is a fusion of our Indian Paratha and the Italian Pizza. Parathas are whole wheat bread which can be made with or without stuffing. This Cheese Paratha is ideal for breakfast, brunch, dinner and even for kids lunch box snack. The stuffing can be customized as your choice. Even the stuffing can be made by sauteing onions and the veggies like carrot, potatoes, cauliflower etc, mixed up with little spices. But the recipe over here is a quick and easy one without any sauteing, just mix it up and the stuffing is ready.

Preparation Time: 30 minutes
For Paratha:-
Wheat flour - 2 cup
Oil - 2 tbsp
Salt
Water
For stuffing:-
Mozzarella Cheese - 1 cup
Onion - 1 small to medium (diced)
Capsicum - 1/4 cup (diced)
Olives - 5 to 6 (sliced to thin circles)
Corn Kernels - 2 tbsp
Chicken, Cooked and shredded - 1/4 cup (optional)
Other ingredients:-
Tomato sauce / pizza sauce - 1/2 cup
Chilli flakes
Mixed dried herbs

Method:-
1. Knead wheat flour, oil & salt with enough water, and prepare a soft dough. Keep aside.
2. Prepare the stuffing by mixing together all the ingredients mentioned for stuffing . Keep aside.
3. Make small balls out of the dough, flatten one by one using the rolling pin into circles.
4. Take one circle and spread tomato sauce or pizza sauce (whatever using), put good amount of stuffing one side of the circle and fold the other side over it, so the stuffing is closed and you get a half moon shape. Press the sides with your hand and seal the edges.
5. Heat up a tawa (flat pan), place the half moon paratha and cook on both sides, by pressing slightly.
6. Brush ghee when it is done and serve hot.
Notes:-
1. For sauce, i used Chili garlic sauce and the taste was outstanding.
2. If you want a round shape, after adding the stuffing in the center, bring all the edges to center together and join them together and seal. It will be in shape of ball now. sprinkle some flour and roll them slightly thick.
Or even keep the stuffing in the center of one paratha and cover it with another paratha and seal the edges.
3. Instead of ghee, you can use any kind of oil, to brush over the parathas.
