Puff Pastry Pie



Creamy chicken pie filling with whole goodness of spinach and other veggies, topped with beautifully flaky puff pastry. A comfort food bliss!
This can be considered as a great way to turn leftover chicken and veggies into a whole new and delicious dish. 



Puff Pastry Pie
Preparation Time : 15 minutes
Cooking Time : 20 minutes
Baking Time : 45 minutes

Ingredients:
Puff Pastry - 300g
Chicken - 1 breast piece / 200 g (diced & marinated with salt and pepper)
Onion - 1
Spinach - 1 bunch
Potato -1
Carrot - 1
Pasta - 2 cups
Flour - 2 tbsp
Chicken Stock - 1 cup
Milk - 1 cup
Butter - 3 tbsp
Oil - 2 tbsp
Parsley - a handful
Salt
Pepper

Method:
1. Thaw the puff pastry.
2. Cook the pasta in boiling water with salt and 1 tbsp oil till done and keep aside.
3. In a pan, add oil and shallow fry the chicken and keep aside.
4. In the same pan, add butter, add onion and saute till translucent.
4. Add potatoes and carrots and cook till chicken is done.
5. Add spinach, saute well and let it cook.
6. Add in flour and give a good mix for 2 to 3 minutes.
7. Stir in the Chicken Stock and milk and cook till the mixture thickens.
8. Add cooked pasta and fried chicken , combine well, add parsley, adjust salt and pepper.
9. Spoon this cooked mixture to an oven safe casserole.
10. Line the casserole with puff pastry sheet and make cuts in the sheets using a knife as you wish.
11. Bake the pie at 180 degree Celsius for 40 minutes or until the pastry is done and golden brown.
